SENSE OF THE SEASON… First-cut hay

The smell of hay hangs sweetly in the mid-june air, the earliest time of year for the first cut – and an almanac sign that dry conditions are here to stay. Mature grass stalks reaching to the sunshine are felled to dried gold in the meadows, dividing the farming year and scenting the summer to come.
