CLAUS Meyer offers a slice of bread-making expertise in his new book Meyer’s Bakery – Bread and baking in the Nordic Kitchen. The co-founder of Copenhagen’s celebrated noma restaurant recently opened his Meyers Bageri chain in the States, and his new recipe book (published by Mitchell Beazley, priced £25) offers photographic step-by-step instructions to make perfect bread from rye loaves and cinnamon rolls to spelt bread and scones.
