CASH-STRAPPED Brits are swapping takeaways for ‘fake aways’ in a bid to balance the household budget, according to a report by Sainsbury’s, with seven out of 10 people surveyed saying they have cut back on ‘social spending’ – trips to the pub, eating out and takeaways – over the last 12 months.

Sainsbury’s has slashed prices on nearly 1,000 products to help fuel the fakeaway boom. The cost of an average chicken chow mein is £9.26 per head, but cooking one at home costs just £1.15.

INGREDIENT­S (Serves 6)

2 garlic cloves, crushed; 1 fresh chilli, deseeded and chopped; 30ml rapeseed oil; 200ml coconut milk; 2 tbsp light brown sugar; 3 tbsp crunchy peanut butter; 6 chicken breasts, cut into long strips; 30g unsalted peanuts, chopped; 30g unsalted cashew nuts, chopped; 15g parsley, chopped

METHOD:

1. In a wok, fry the garlic and chilli in the oil for 2-3 minutes and set aside.

2. Once cool, add to a bowl with the coconut milk, sugar and peanut butter. Add the chicken strips and mix well, cover and leave to marinate.

3. Carefully add the chicken strips to skewers. Grill on a medium heat for eight minutes on each side or until cooked through. Sprinkle with the chopped nuts and parsley to serve.
