Grandmother’s chicken soup
INGREDIENTS
500g skinless chicken breast, diced
100g brown rice
1 white onion, peeled and diced
2 large carrots, trimmed and diced
1 parsnip, trimmed and diced
1 medium swede, trimmed, peeled and diced
1 leek, trimmed and diced
80g frozen peas, defrosted
2 litres chicken stock (good-quality stock cubes or shop-bought stock)
2 tbsp olive oil
2 tbsp fresh pesto or a handful of fresh chopped parsley
Sea salt and freshly ground black pepper
