Beetroot and cherry porridge

INGREDIENT­S

65g red quinoa

30g dried cherries

75g fresh blueberrie­s and blackberri­es

1 heaped tbsp Greek yoghurt

1 tsp pumpkin seed

1 tsp chia seeds

1 tsp concentrat­ed beetroot juice

250ml apple juice

100ml water

Method

• Mix together the red quinoa, dried cherries, chia seeds, concentrat­ed beetroot juice, apple juice and water in a saucepan. Simmer gently for 16-18 minutes.

• Allow to sit for 5 minutes for the quinoa to absorb the liquid.

• Once the quinoa is tender, pour into a bowl. Spoon over the yoghurt and top with pumpkin seeds and fresh berries to serve.
