No bake chocolate cheesecake

This uncooked cheesecake is made with nuts, fruit and cocoa so contains no refi ned sugar but has all the taste of the real thing. Serves 8.

INGREDIENT­S

FOR 110g40g 200g THE unsweetene­dwalnutspi­tted BASE: medjool cocoa dates power

1 1 tablespoon­pinch salt vanilla extract

FOR THE FILLING:

360g raw cashews

1 1/ 2 teaspoons vanilla extract

165g frozen ripe banana

1 tablespoon fresh lemon juice

3 tablespoon water

1 pinch salt

40g unsweetene­d cocoa powder

75g pitted medjool dates

METHOD

1) For the base: In a food processor, blitz the walnuts until you get coarse crumbs. Add the remaining ingredient­s and blend until well incorporat­ed, although crumbly.

2) Press 200g of the base mix evenly into a cling fi lm- lined 20cm round spring form cake tin. Set aside.

3) For the fi lling: Make sure the cashews have been soaked overnight and drained before using. Blend the fi lling ingredient­s in a processor until smooth. Taste the sweetness and add more dates as you wish.

4) Pour into the tin and smooth out before covering with cling fi lm and placing into the freezer for 2 to 3 hours.

5) Serve once set.
