Salmon with capers

What could be simpler than some fresh salmon fillets, seasoned well and cooked with capers. Garnish with wedges of lemon and serve with potatoes and salad for a healthy and quick lunch or supper. Serves 4.

INGREDIENT­S

4 salmon fillets

2 tablespoon­s olive oil

2 tablespoon­s capers

Pinch of salt

Pinch of black pepper

4 lemon wedges

METHOD

1) Preheat a large heavy frying pan over medium heat for 3 minutes.

2) Coat the salmon with olive oil. Place in frying pan and increase heat to high. 3) Cook for 3 minutes. 4) Sprinkle with capers, salt and pepper. Turn salmon over and cook for 5 minutes or until browned. Salmon is done when it fl akes easily with a fork.

5) Transfer salmon to individual plates, and garnish with lemon wedges.
