Beef enchiladas

Tasty enchiladas with rich and flavoursom­e minced meat. Cooked in the oven with cheese and salsa, they will be a delicious mix of creamy filling and crispy tortillas. Serves 4.

INGREDIENT­S

400g minced beef

1 tablespoon cooking oil

1 sachet taco seasoning mix

1/2 red pepper, finely chopped

1/2 yellow pepper, finely chopped

1 squeezy bottle salsa

300ml grated cheese

1 pack corn and wheat soft tortillas

Jar of soured cream topping

METHOD

1) Pre heat the oven to 200C/180C fan assisted, gas mark 6.

2) Fry the minced meat in oil until brown. Add the taco seasoning mix and peppers and fry for a further 2-3 minutes.

3) Add half of the salsa and half the grated cheese. Stir and bring to the boil.

4) Spread 2-3 tablespoon­s of filling on each tortilla. Roll up and place the rolls seam down in an ovenproof dish.

5) Pour the rest of the salsa over the rolls and sprinkle with the remaining cheese.

6) Cook in the oven for about 10 minutes and serve with soured cream topping.
