Spaghetti with fresh tomato sauce

For a simple but classic dish little can beat spaghetti served with a fresh and piquant tomato sauce. This recipe is good value making the most of fresh ingredients for the best flavours. Serves 4.

INGREDIENTS

300g spaghetti 4 tomatoes 1 small green pepper, seeded and diced 2 garlic cloves, crushed 3 tablespoons olive oil 1/2 teaspoons dried crushed chillies (optional) 2 tablespoons chopped fresh parsley Salt and freshly ground black pepper

METHOD

Bring a large pan of lightly salted water to the boil and cook the spaghetti for 10–12 minutes, until just done.

Meanwhile, peel the tomatoes by scalding first in a bowl of water for 30 seconds then running under cold water to loosen the skins.

De-seed and roughly chop the tomato flesh.

Mix the tomatoes with the diced pepper, garlic, olive oil, chillies, if liked, parsley and salt and pepper to season in a saucepan. Warm this sauce over a low heat.

Drain the pasta then tip into the saucepan, mixing the sauce well before serving immediately.
