Spanish braised cod

You can use cod or haddock fillets for this recipe which is an extra easy and quick way to make a great fish dish, suitable for all the family. Serves 4.

INGREDIENTS

2 tablespoons olive oil 1 onion, thinly sliced 2 cloves garlic, minced 1 (400g) tin chopped tomatoes 75g black olives, pitted and sliced Half a red pepper, thinly sliced Handful chopped fresh parsley 100ml dry white wine 450g cod fillets

METHOD

In a large frying pan, heat the olive oil over a medium heat. Sauté the onions and garlic in olive oil until softened.

Stir in the chopped tomatoes, black olives, red pepper, chopped parsley and dry white wine. Simmer for 5 minutes.

Place the cod fillets in the sauce. Simmer for about 5 more minutes, or until the fish turns white.

Serve with rice, potatoes or salad.
