AROUND the world millions of people are celebratin­g Eid this week and there’s no reason why everyone can’t enjoy the delightful flavours that grace the tables during this foodie festival. Create your own celebratio­n meal with these easy and tasty dishes.

SPICED LAMB AND CHICKPEA TART Serves six 2tsp olive oil; 1 red onion, finely chopped; 500g minced lamb; 1 large carrot, coarsely grated; 1tsp ground cumin; 1tsp ground coriander; pinch of ground cinnamon; 4 cardamom pods, crushed and seeds finely ground; 2tbsp tomato puree; salt and pepper; 1 large tomato, roughly chopped; 320g puff pastry; 400g can chickpeas; 2tbsp chopped flat-leaf parsley; 2tbsp chopped coriander; fresh mint leaves for serving. 90g chickpeas; 2tsp tahini; 1/4 ¼ garlic clove; 1tbsp lemon juice; 2tbsp olive oil; ¼tsp ground cumin 1

Preheat the oven to 180°C fan. Heat the oil in a saucepan, add onion and cook over a medium heat until the onion has softened.

Increase the heat, add the lamb, stirring to break up the

larger pieces. Brown the lamb, then stir in the grated carrot. Add all the spices, season well and stir in the tomato puree. Cook for two minutes, stirring continuous­ly.Add the chopped tomato, cover and cook for 10-15 minutes until the lamb is completely cooked.Add a splash of water if it’s a little dry.

While the lamb is cooking, unroll the pastry and place on a baking sheet using the parchment it came on to line the baking sheet. Using a small sharp knife, score a 1cm border around the edge.Take care not to cut the pastry all the way through. Bake in the oven for 20-25 minutes until the pastry is golden brown.
