100g hum­mus, 4 boiled eggs, 2 large hand­fuls salad leaves, 1 small cu­cum­ber, 1 hand­ful cherry to­ma­toes. Dress salad with 2 tbsp ex­tra vir­gin olive oil, 2 tsp bal­samic vine­gar, lemon juice, salt and pep­per.

1 diced carrot, 1 onion and 2 gar­lic cloves. Fry for two min­utes. Add 400g tin chopped to­ma­toes, 400g tin can­nellini beans, 250ml veg­etable stock and cook for 30 min­utes. Turn off the heat, add 300ml sin­gle cream. Sea­son and blend.

Mix 100g cooked whole­grain fusilli pasta with 60g chopped sun­dried to­ma­toes, 240g tinned tuna, salmon or mack­erel, 1 red pep­per, finely diced, 4 large hand­fuls baby spinach leaves, 1 hand­ful fresh basil, 1 tsp red wine vine­gar, lemon, juiced and 60g feta.
