Roasted garlic potatoes with Parmesan
INGREDIENTS
700g potatoes, cubed
Non-stick cooking spray
3 tbsps olive oil
3 cloves garlic, minced
2 tsps dried parsley flakes
40g grated Parmesan cheese
Salt and pepper to taste
METHOD
1) Preheat the oven to 200C / gas 6.
2)Spray a large glass baking dish with non-stick cooking spray.
3) Arrange the potatoes in the dish and drizzle with the olive oil.
4) Sprinkle with garlic, parsley flakes, Parmesan and seasoning, and toss to coat evenly.
5) Bake for 25-30 minutes, or until potatoes are tender, stirring once half-way through.
6) Serve immediately while still piping hot.
