Quesadilla­s with chicken and pesto

This Mexican dish is tasty, flavoursom­e and easy. Only a few ingredient­s are required to make a delicious lunch or snack. Serves 2

INGREDIENT­S

1 tbsp olive oil 1 (400g) packet of chicken breast chunks 250g grated Mozzarella cheese 4 tbsp green basil pesto, or more to taste 2 large flour tortillas

METHOD

1) Heat oil in a large frying pan and cook the chicken over a medium-high heat until the breasts are thoroughly cooked. Transfer into a bowl and set aside.

2) In the same pan on medium, place one tortilla and sprinkle half the cheese on top. Heat until cheese is melted.

3) Mix the pesto with the cooked chicken.

4) Cover the tortilla and cheese with the chicken mix. Top with the remaining cheese and the second tortilla.

5) Flip it over and heat until all the cheese is melted and the tortilla is slightly crispy.

6) Remove, slice into quarters and serve.
