Simple chocolate cake
A classic sponge cake turned into a chocolate feast with the addition of good quality cocoa powder. Very simple to make with so few ingredients. Serves 10
INGREDIENTS
200g margarine or unsalted butter 200g caster sugar 3 eggs 150g self-raising flour 50g cocoa powder
METHOD
1) Preheat the oven to 170C. Grease two 23cm sandwich tins and line with baking parchment.
2) Cream the margarine and sugar in a large mixing bowl. Add the eggs, one at a time, to the mixture, gently combining without over-whisking.
3) Mix the flour and cocoa powder together and sieve to remove any lumps before adding a spoonful at a time to the cake mix. Once the flour is incorporated, mix well with an electric whisk.
4) Divide the mixture evenly between the two tins. Bake in the preheated oven for 20 minutes.
Let the sponge cool down on a cooling rack.
5) Once cool, the cake can be filled and decorated as you choose – with things such as jam, cream, buttercream icing or icing.
