STICKY CHICKEN DRUMSTICKS WITH HONEY & SOY Whether you’re feeding a crowd or just your family, Tom Kerridge’s warming dishes will make the night go with a bang

From a sizzling sausage casserole to sticky chicken drumsticks – Tom Kerridge’s brilliant Bonfire Night special

This is a great finger food dish if you’re feeding a crowd – I’ve spiced it up with chilli and spring onions.

Serves 4

7tbsp runny honey

4tbsp light soy sauce

150ml (5fl oz) chicken stock 12 chicken drumsticks

2 garlic cloves, finely grated

3cm (1¼in) piece of fresh ginger, peeled and finely grated

2tbsp sesame oil

3tbsp toasted sesame seeds (try Ocado, or toast your own in a dry frying pan for 1-2 minutes)

1 bunch of spring onions, trimmed and finely sliced

1 red chilli, finely sliced

Pour the honey into a frying pan and cook over a medium to high heat for 3-4 minutes until it turns to a syrupy caramel. It will bubble furiously, so be careful – you’ll need to lift and tilt the pan to allow the bubbling to subside so you can see the caramel colour and thickness. When it starts to go dark, pour in the soy sauce and chicken stock, then remove from the heat and leave to cool.

Place the drumsticks, grated garlic and ginger into a bowl and stir in the honey mixture to coat evenly. Cover the bowl with clingfilm and leave to marinate for at least 2 hours. Preheat the oven to 180° C/fan 160° C/gas 4. Place the drumsticks in a roasting tray and pour the honey marinade over. Place the tray in the oven and cook for 45-50 minutes until the chicken is cooked – the meat will come away from the bone easily. You will need to baste the chicken 3 or 4 times during cooking to ensure the skin gets covered in the sticky glaze.

When the chicken is cooked, remove the tray from the oven. Drizzle in the sesame oil and add the sesame seeds, spring onions and chilli. Toss to combine, making sure all the drumsticks get a good covering, then serve.

TOM’S TIP

You could also use chicken wings for this, but reduce the cooking time to 40 minutes as there’s less meat on them.
