BURGERS TWO WAYS

Burgers are often seen as super unhealthy, but this needn’t be the case. Really, they are just minced meat with whatever flavours you add, and when you make them yourself you can control that. Here I’ve given you two versions for some variety.

Serves 4

For the beef burgers (below)

500g (1lb 2oz) lean minced beef

¼ of a red onion, finely chopped

1 garlic clove, finely chopped

4-5 sun-dried tomatoes, finely chopped

For the Thai chicken burgers (left)

500g (1lb 2oz) minced chicken breast A small bunch of fresh coriander, roughly chopped

2tbsp Thai red curry paste

To serve

Seeded buns, lettuce, sliced tomato and sliced onion

The method for making both burgers is the same. Place the minced meat into a large bowl. Add the other ingredient­s then squidge everything together with your hands until it’s well mixed. Form into 4 burger patties and place on a plate, then chill in the fridge for an hour before cooking.

Either bake the burgers in the oven for 20 minutes at 180° C/fan 160° C/gas 4, or fry or barbecue for 15 minutes. Serve in seeded buns with lettuce, tomato and onion.
