ROASTED FIGS IN BLANKETS

Makes 8

8 ripe figs

100g (3½oz) Stilton cheese, chopped into small pieces

16 slices of prosciutto

To serve

2tbsp balsamic glaze

2tbsp extra-virgin olive oil Salt

Freshly ground black pepper

Thyme sprigs

Preheat the oven to 180°C/ fan 160°C/gas 4 and line a baking tray with baking parchment. Using a sharp knife, cut a cross into the top of each fig, then gently squeeze the bottom of each fig in order to open the fruit. Divide the Stilton among the figs, spooning the pieces into the top of each one. Wrap 2 slices of prosciutto around each fig, leaving the tops of them uncovered. Secure with cocktail sticks if necessary. Place onto the baking tray and roast for 10 minutes, until the cheese has just melted and the prosciutto is nice and crisp.

To serve, divide the figs onto small serving plates, drizzle each with the balsamic glaze and olive oil, then season and garnish with thyme sprigs.
