CHILLI BEAN BAKE
Serves 4
l 2tbsp olive oil
l 1 large onion, sliced into thin wedges
l 3 garlic cloves, finely chopped
l 200g (7oz) squash or pumpkin, diced
l ½-1tsp chilli flakes
(to taste)
l 2tsp dried sage or a few fresh sage leaves, shredded
100ml (3½fl oz) white wine or water 3 x 400g tins of cannellini beans 250g (9oz) cherry tomatoes
200g (7oz) sprouting or tenderstem broccoli, trimmed and roughly chopped 400g (14oz) mozzarella, thickly torn or sliced
Sea salt and freshly ground black pepper

Preheat the oven to 200°C/ fan 180°C/gas 6.
Heat the oil in a large sauté pan or a saucepan and add the onion. Cook gently over a medium heat until it starts to take on some colour, then add the garlic and the squash or pumpkin. Continue to cook for another 5 minutes, then sprinkle in some chilli flakes and the sage. Season with salt and black pepper, and pour in the wine or water and the cannellini beans. Blitz 150g of the cherry tomatoes in a food processor until smooth, then add to the pan. Arrange the broccoli over the top, then bring the liquid to the boil. Turn down to a simmer and cover until the broccoli has steamed to al dente.
Spoon the contents of the pan into an ovenproof dish and cover with the mozzarella. Tuck the rest of the cherry tomatoes in among the mozzarella. Bake in the oven for half an hour, or until bubbling and lightly browned. Serve with a crisp green salad.
