CORIANDER & LIME HUMMUS

Serves 4 ● Prep 5 mins

● 400g tin of chickpeas, drained and rinsed

● 1 large garlic clove

● 2tbsp 0% fat natural Greek yoghurt

● 1tbsp tahini

● ½tbsp olive oil

● Juice of 1 lime

● A handful of fresh coriander

● 2tbsp water

● Vegetable crudités, to serve

Put the chickpeas in a food processor with the garlic, yoghurt, tahini, olive oil, lime juice, fresh coriander and 2tbsp of water. Blitz until you have a chunky textured hummus. Add a little more water if you prefer it smoother. Serve with vegetable crudités.
