BANANA LOAF
Many of us spent lockdown perfecting banana bread – including Justine. Here is a great one – nutty, delicious and surprisingly healthy.

• 2-3 very ripe bananas (about 250g/9oz peeled weight), mashed with a fork
• 2 large eggs, beaten
• 200g (7oz) ground almonds
• 75g (2¾oz) butter, melted, or rapeseed oil
• 50g (1¾oz) wholemeal self-raising flour
• 1tsp ground mixed spice
• 1tsp baking powder
• 75g (2¾oz) mixed nuts or pecans, roughly
chopped (optional)
