Here I am in my restaurant Harveys with Gordon
who was always very good at absorbing knowledge. Gordon started training with me in 1988, just after we won our second Michelin star despite only opening in 1986. There are many stories about us falling out or me making him cry – I did shout at him once and he cowered – but I’d like to think that’s all behind us now. I would say that Gordon is probably the most competitive man I know.

Albert Roux gave me an opportunity to work at Le Gavroche – the first restaurant in Britain to get three Michelin stars – in 1981. Watching him in the kitchen was like seeing Eric Cantona play football. The truth is, had I not gone to work for him, I would never have won three Michelin stars myself. This is Albert as best man at my second wedding [to Lisa Butcher]. The great man and his brother Michel did what very few chefs could achieve – they created a movement, not a following. 1990
The late, great, Bob Carlos Clarke took the photos for my book White Heat [inset] and this is us at the launch party. The book had recipes and stories and was a bestseller – it’s in its 26th edition now. There were two really iconic photos in it: one of me with a cigarette hanging out of my mouth and the one you can see on the cover with a meat cleaver. 2009belittle
I didn’t do ITV’S Hell’s Kitchen to
people or to put them down, I tried to bring out the best in people. I was representing my industry. This was taken after Linda Evans beat Ade Edmondson in the final of series four. My main aim was to feed the customers the best I could. I was working with a bunch of celebrities who couldn’t cook, but they’re not stupid and so I taught them a system and that’s why they succeeded in feeding everybody. 1977 1970
I look a gentle little boy, don’t I? This is me [circled], aged eight, at school in Leeds. I was a bit naughty but after my mother died from a brain haemorrhage when I was six, I was a loner. Years later, I had dinner with the headmistress and she said, ‘You weren’t a bad boy, you and your friends were just naughty, boys today are bad.’ 1991
This was taken in Michael Caine’s garden in Oxfordshire. I was introduced to him by one of my best friends Steven Saltzman, whose father Harry was a film producer. Michael and I opened The Canteen in Chelsea, which was a place to be seen in for a while – people like George Michael used to come.

– she is, I think, the greatest living woman in the world. It was an honour to meet her when she came on board the new P&O ship Britannia after the ceremony in Southampton docks. There was a fabulous gala dinner in the evening and I created the main course, Romney Salt Marsh Lamb Dijonnaise.
