MACKEREL NICOISE Serves 2 1. In a jar shake 25ml extra virgin olive oil, 2tsp red wine vinegar and a pinch of sugar, salt and pepper. 2. In a large pan, boil 200g of chopped, scrubbed new potatoes for 12 minutes. Add 125g fine green beans to the water for three minutes. Remove with tongs and blanche in a bowl of cold water. 3. Keep the water on the boil and add 2 medium eggs to the pan and simmer for six minutes. 4. Drain, carefully remove the shells and then cut the eggs in half. 5. Drizzle the dressing over the cooked potatoes, beans, 75g black pitted olives, 4 chopped tomatoes and 2 flaked mackerel fillets (skin removed), add the eggs, and then serve your Nicoise salad.
