Baked sweet potato with guacamole

SERVES 2 2 large sweet potatoes, scrubbed 1 tsp olive oil 1 ripe avocado 2 tsp lime juice ½ small onion, finely chopped 1 tomato, finely chopped 2 tbsp natural yoghurt ¼ tsp paprika PREHEAT the oven to 190c/375f/ gas 5. Rub a little oil over the sweet potatoes. Put onto a baking sheet and bake for 50 minutes, or until the potato is tender when pierced. Meanwhile, put the avocado flesh into a bowl and mash with the lime juice. Stir in the onion, tomato and yoghurt. Season to taste. Split the potatoes in half. Add a large spoonful of the guacamole and sprinkle with paprika. Serve hot.
