Soft boiled eggs & asparagus soldiers
EGGS are full of protein and rich in vitamins and minerals. What better way to serve them than with asparagus, a great source of the ‘good’ bacteria-feeding prebiotic inulin.
SERVES 1
2 eggs
4 asparagus spears
PLACE the eggs in cold water and bring to the boil, then simmer for 5 minutes. Meanwhile, snap the woody end off the asparagus and simmer for 5 minutes in salted water. Cut the tops off the eggs and use the asparagus spears as ‘soldiers’ to dip in.
