Perfect poached eggs
A WONDERFULLY filling and nutritious start to the day. Experiment with different types of bread: you might find sourdough easier to digest, or try my delicious breakfast bread (see recipe, left). SERVES 2 l 4 eggs l 2 slices sourdough or breakfast bread
l 2 handfuls fresh spinach l 8-10 cherry tomatoes, halved
l Salt and pepper GENTLY poach the eggs in boiling water (for around 3 minutes). Meanwhile, toast your preferred bread and serve with the poached eggs on top. Scatter with the spinach and cherry tomatoes. Season with salt and pepper, to taste.
