TURKEY is a high-quality protein, which helps you feel full for longer. Keep a bag of frozen spinach in the freezer — a block or two can be thrown in to so many meals to boost your vegetable intake, and frozen spinach is just as nutritious as fresh. SERVES 4 l 1 onion, chopped l 2 garlic cloves, crushed l 2 tsp dried oregano l 8 large basil leaves

l 3 handfuls baby spinach (or 2 balls frozen spinach, defrosted) l Zest 1 lemon l ½ tsp sea salt l Ground black pepper l 3 tbsp extra-virgin olive oil

l 400g turkey mince TO SERVE l Large salad (such as rocket, frisée and chicory) l Homemade hummus (see recipe on page 13)

l 2 courgettes, griddled and sliced BLITZ together the onion, garlic, oregano, basil, spinach, lemon zest, salt and pepper with 1 tbsp olive oil in a food processor, just briefly to retain some texture. Place the mixture in a large bowl and combine with the turkey mince, using your hands or a rubber spatula. Shape into eight patties and pop them in the fridge for at least 20 minutes to firm up. Then, place a griddle or frying pan over a medium-high heat and fry the patties in the rest of the oil until browned — around 5 minutes on each side. Serve with a large salad, some homemade hummus and slices of griddled courgette.
