Cheery chia pots
LOOK out for chia seeds in the supermarket. They are packed with nutrients and are a great source of fibre, protein and omega 3 fatty acids. When soaked in liquid, they swell up to a porridge-like consistency. SERVES 1 l 2 tbsp chia seeds l 125ml dairy-free milk of your choice (for example, coconut, hazelnut or almond) l ½ tsp vanilla extract l ½ tsp ground cinnamon l 1 tbsp fresh or frozen berries PUT all the ingredients except the berries into an airtight or covered jar (approximately 300g volume) and stir well. Add half the berries and stir again. Place the jar in the fridge and leave to chill — ideally overnight, but for at least 30 minutes. When you take it out, the seeds will have absorbed the liquid and plumped up. Serve with the rest of the berries and one of these extra toppings:
l 1-2 tbsp toasted coconut flakes
l 1 tbsp ground almonds or flaxseed
l 1-2 tbsp raspberries or blueberries
