Crack an egg on to a small plate, then slide it into gently simmering salted water Reduce the heat to low. Poach only one or two eggs at a time Swirl water around the edges with a spoon to give neat shapes Simmer gently for about three minutes until the white is opaque. Lift out with a slotted spoon and drain
