Scrambled eggs with mushrooms & smoked trout

4 large flat mushrooms Calorie-controlled cooking spray 4 eggs 2 tbsp chopped fresh chives 1 large garlic clove, crushed 4 tbsp skimmed milk 125g hot-smoked trout, flaked Few sprigs fresh dill ½ lemon, cut into wedges

HEAT the grill to medium-high. Mist the mushrooms with cooking spray and place, stalk-side down on a grill pan, lined with foil. Grill for 6 minutes, then turn, season and cook for 3-4 minutes more. Whisk the eggs, chives, garlic and milk together, and season. Mist a non-stick frying pan with cooking spray and place over a medium heat. Add the egg and cook, stirring slowly for 2-3 minutes. Divide the mushrooms between 2 plates, top wit the egg, then scatter the smoked trout over. Severe with dill and lemon wedges.
