Prosciutto and garlic mushroom pizza

Calorie-controlled cooking spray 200g portobello mushrooms, sliced 2 garlic cloves, crushed

2 sprigs thyme, leaves picked and chopped 300g thin and crispy pizza base 80g passata 4 slices prosciutto 125g mozzarella, torn 10g rocket

PREHEAT the oven to 220c, fan 200c, gas mark 7. Heat a large, non-stick frying pan over a medium heat, mist with cooking spray. Add the thickly sliced mushrooms, garlic and thyme. Cook, stirring occasional­ly for 5 minutes until the mushrooms are golden. Place the pizza base on a baking tray, then spread 4 tbsp passata over each one, getting as close to the edges as you can. Add the mushroom mix to the pizza base along with torn strips of prosciutto and scatter the mozzarella over. Bake for 12-15 minutes. Top with the rocket and serve half a pizza per person.
