MARY explores our ‘foodie past’ this week, and prepares dishes celebrating the best of fresh British produce. On the menu: pistou linguini, a pasta dish with a sauce made using handfuls
of fresh chives, parsley and basil; cannon of lamb with spring vegetables; baked salmon with asparagus; and a delicious looking tarte tatin. She also visits Hampshire to try her hand at cutting watercress, before going back in time on board a Watercress Line steam train, which once transported locally grown watercress to
markets in London.
