TODAY’S RECIPE: Steak & aubergine salad
A protein-packed green salad. SERVES 2 Ingredients
1 aubergine, halved lengthways, cut thinly 2 tbsp flour 3½ tbsp olive oil 1 sirloin steak 100g lamb’s lettuce 50g feta, cubed For the dressing: 1 green chilli, halved and chopped ½ lemon, juiced ½ small pack coriander, plus extra leaves to serve ½ small pack mint, plus extra leaves to serve
1. Dust aubergine slices with flour and seasoning. Heat 2 tbsp olive oil in a pan, then fry the slices for a few minutes on each side. Set aside. Turn up the heat, season steak and fry for 2 minutes on each side (rare). After 5 minutes, slice.
2. Blitz remaining oil with dressing ingredients and a splash of water. Mix half the dressing with the lettuce, then tip on to a plate. Top with aubergine, steak, cubed feta and the remaining dressing. Scatter over herbs and serve.
