TO­DAY’S RECIPE: Steak & au­bergine salad

A pro­tein-packed green salad. SERVES 2 In­gre­di­ents

1 au­bergine, halved length­ways, cut thinly 2 tbsp flour 3½ tbsp olive oil 1 sir­loin steak 100g lamb’s let­tuce 50g feta, cubed For the dress­ing: 1 green chilli, halved and chopped ½ le­mon, juiced ½ small pack co­rian­der, plus ex­tra leaves to serve ½ small pack mint, plus ex­tra leaves to serve

Method

1. Dust au­bergine slices with flour and sea­son­ing. Heat 2 tbsp olive oil in a pan, then fry the slices for a few min­utes on each side. Set aside. Turn up the heat, sea­son steak and fry for 2 min­utes on each side (rare). Af­ter 5 min­utes, slice.

2. Blitz re­main­ing oil with dress­ing in­gre­di­ents and a splash of wa­ter. Mix half the dress­ing with the let­tuce, then tip on to a plate. Top with au­bergine, steak, cubed feta and the re­main­ing dress­ing. Scat­ter over herbs and serve.
