TODAY’S RECIPE: Halloween cupcakes

SPOOKILY tasty. MAKES: 12. Ingredient­s

100g butter, cubed

100g plain chocolate

100g golden caster sugar

1 egg

½ tsp vanilla extract

125g self-raising flour

250g white fondant icing

500g mixed pack coloured fondant

Method

1. Heat oven to 160C/140c fan/gas 3. Line a cupcake tin with paper cases. Melt butter, chocolate, sugar and 100ml hot water in a pan, stirring occasional­ly. Set aside to cool a little.

2. Stir in egg and vanilla. Sift flour into a large bowl, then add the chocolate mixture and stir until smooth. Fill cases to three-quarters full. Bake low in the oven for 20 to 22 minutes, then remove and cool.

3. If the fondant is sticky, don’t roll it all out. Instead, pat walnut-sized lumps over each cake. Use picture as a guide. Mix yellow and red to make orange. Decorate with icing pens and fondant decoration­s stuck on with water. n
