6 EGGS + 240G LOW-FAT CREAM CHEESE, AT ROOM TEMPERATUR­E + 270G WHITE CHOCOLATE = WHITE CHOC CHEESECAKE SERVES 8–10

1. Preheat oven to 195c. Line the sides and base of a medium round cake tin (23cm across) with baking paper.

2. Melt 240g of white chocolate over a pan of boiling water. Save 30g for later. Add the cream cheese to the bowl and stir.

3. Separate eggs, add the yolks to the cheese and chocolate mixture, and combine.

4. In a separate bowl, whisk egg whites until they form stiff peaks. Transfer cheese and chocolate mixture to a larger bowl — then slowly add spoonfuls of the egg white, stirring gently with a metal spoon as you go.

5. Pour mixture into the cake tin. Bake in a bain-marie for 30 minutes, then switch the oven off and leave in for another 10 minutes until it is spongy (rather than wobbly). Let it cool in the tin before turning out, then melt the remaining chocolate and drizzle over the top.
