200G DESICCATED COCONUT

1 X 397G TIN OF SWEETENED CONDENSED MILK

300G DARK CHOCOLATE,

= BOUNTY BARS

MAKES 14-16 BARS

1. Mix coconut and milk into a thick paste. Cover with cling film. Chill in fridge for two hours, until hardened but pliable. 2. Dampen your palms in warm water. Flatten coconut filling into a long, fat rectangle, 1.3cm thick. Use a knife to straighten edges, and slice into bars. Spread out on a plate covered in greaseproo­f paper. Chill in fridge for one hour. 3. Melt 250g of chocolate in a heatproof bowl over a pan of boiling water. Allow to cool a little before tipping on a plate. 4. Dip each bar in chocolate. Use a spatula to cover the top and four sides (don’t worry too much about the bottom). Work quickly so the filling doesn’t soften. 5. Place bars on a cooling rack, over the plate, and pop in the fridge for 10 minutes to set. Melt remaining 50g chocolate and, when the bars are hard, drizzle this from side to side over the top for a glossy, wavy topping. Allow to set — and enjoy!
