TODAY’S RECIPE: Banana, coconut and cardamom bread

PERFECT treat for breakfast or brunch. Serves: 8-10.

Ingredient­s

125g butter or coconut oil, plus extra for tin 2 large ripe bananas 3 medium eggs 125g golden caster sugar 2 tbsp coconut yoghurt or natural yoghurt 200g plain flour 2 tsp baking powder Seeds from 12 cardamom pods, crushed

Method

1. Heat oven to 160c/140c fan/gas 3. Butter a 900g loaf tin and line with baking parchment. Melt butter or coconut oil. Mash bananas and add butter or oil, eggs, sugar and yoghurt.

2. Combine flour, baking powder, crushed cardamom and a pinch of salt in a bowl. Add wet ingredient­s and whisk to a smooth batter. Pour into tin and bake for 70 minutes until golden and risen. Insert a skewer into centre of cake to make sure it’s cooked — it should come out with a few crumbs, but no wet cake mixture. If needed, return to the oven for five to ten minutes and check again. Serve slightly warm. Once cool, it will keep in a tin for up to five days.
