TODAY’S RECIPE: Carbonara with chicken

DELICIOUS twist on a classic. Serves 4.

Ingredients

400g dried spaghetti 1 tbsp olive oil 1 garlic clove, halved 77g pack pancetta 1 chicken breast, cut into strips 2 eggs 100g grana padano, finely grated 1 tbsp butter

Method

1. Cook spaghetti following pack instructions. Meanwhile, heat oil in a frying pan and fry garlic and pancetta until crisp, add chicken strips and fry briefly until just cooked through. Fish out garlic and discard. Beat eggs with grana padano and black pepper.

2. Add a couple of tablespoons of pasta water to pancetta pan, along with butter. Drain pasta and add to pan. Pour in egg mixture, take pan off heat and toss together so egg cooks in heat of the pasta. Divide between four warm bowls and add more grated cheese, if you like.
