TODAY’S RECIPE: Enchilada pie

MEXICAN flavours. Serves 2.

Ingredient­s

1 tbsp oil 2 peppers, sliced 1 red onion, halved and sliced 400g mixed beans 2 tbsp fajita spice mix 400g can tomatoes Bunch coriander 4 corn tortillas 100g soured cream 30g grated cheddar

Method

1. Heat oil in a pan. Fry peppers and onion until soft. Add drained beans, fajita spice mix, chopped tomatoes and seasoning. Cook for five minutes to reduce tomatoes. Stir in most of the chopped coriander. Heat grill. Warm tortillas in the microwave for 30 seconds.

2. Spread a quarter of mixture over base of a round ovenproof dish. Top with some soured cream. Repeat layers three times, finishing with soured cream. Sprinkle over cheese and grill for five minutes or until golden. Scatter over rest of coriander before serving.
