TODAY’S RECIPE: Ginger, sesame & chilli prawn & broccoli stir-fry
MIDWEEK supper in a flash. Serves 2.
Ingredients
250g broccoli, cut into florets
2 balls stem ginger, finely chopped, plus
2 tbsp syrup from jar
3 tbsp soy sauce
1 garlic clove, crushed
1 red chilli, a little thinly sliced, rest finely chopped
2 tsp sesame seeds
½ tbsp sesame oil 200g raw king prawns
100g beansprouts
TO SERVE cooked rice or noodles
Method
1 Heat pan of water until boiling. Tip in broccoli and cook for just one minute — it should still have crunch. Meanwhile, mix stem ginger and syrup, soy sauce, garlic and chopped chilli.
2 Toast sesame seeds in a dry wok or large frying pan. When browned, turn up heat and add oil, broccoli and prawns. Stir-fry for a few minutes until prawns turn pink. Pour over ginger sauce, then tip in beansprouts. Cook for 30 seconds, adding a splash more soy or ginger syrup, if you like. Scatter with sliced chilli and serve over rice or noodles.
