TODAY’S RECIPE: Red pepper linguine

A QUICK and easy, tasty supper using storecupbo­ard ingredient­s. Serves: 1.

Ingredient­s

1 roasted red pepper (from a jar or roast yourself) 30ml olive oil 50g walnuts, toasted, plus extra to serve 1 small garlic clove 100g linguine or spaghetti TO SERVE: Parmesan or vegetarian equivalent, grated

Method

1 Blitz roasted red pepper with olive oil, toasted walnuts and garlic in a food processor. Season well and set aside.

2 Bring a pan of salted water to the boil, add pasta and cook for one minute less than pack instructio­ns. Drain, reserving a ladleful of cooking water.

3 Tip pasta back into pan, along with reserved cooking water and red pepper sauce, and return to the heat to warm through. Tip into a bowl and top with parmesan and extra chopped toasted walnuts. Season and serve.
