Not all herbs grow best in Mediterranean conditions. Garlic, chives, basil, parsley, lovage, mint, angelica and sorrel are among those that thrive in rich soils — so plan a herb garden with separate sections or beds, then the soil can be prepared accordingly. Good drainage is vital. Plenty of compost will help the soil structure as well as adding nutrients, but I always add extra horticultural grit before planting any herbs.
