Hot cross bread & lemon pudding

EASTER spin on bread-and-butter pudding. Serves 4.

Ingredient­s

Knob of butter 4 stale hot cross buns 200g lemon curd 2 large eggs 200ml double cream 200ml milk ½ tsp vanilla extract

4 tbsp caster sugar Little lemon zest TO SERVE: Cream or vanilla ice cream

Method

1 Butter a one-litre baking dish. Cut buns into three horizontal slices and sandwich together with some of the lemon curd. Arrange in dish.

2 Whisk together eggs, cream, milk and remaining lemon curd, then sieve into a jug with vanilla and 3 tbsp of sugar. Pour over buns and stand at room temperatur­e for 30 minutes to let this custard soak in.

3 Heat oven to 160c/140c fan/gas 3. Scatter remaining sugar and lemon zest over pudding. Bake for 30 to 40 minutes until top is golden and custard gently set. Stand for five minutes, then serve with cream or vanilla ice cream.
