TODAY’S RECIPE: Quick chicken chasseur
CLASSIC dish in a flash. Serves: 4.
Ingredients
8 rashers streaky bacon, chopped 4 chicken breasts, in large chunks 200g pack baby button mushrooms 1 tbsp plain flour 400g tin chopped tomato with garlic 1 beef stock cube Worcestershire sauce Handful of parsley, chopped
Method
1 Heat shallow saucepan and sizzle bacon for two minutes until starting to brown. Throw in chicken, then fry for three to four minutes until it has changed colour. Turn up heat and add mushrooms. Cook for a few minutes, stir in flour and cook until a paste forms.
2 Tip in tomatoes, stir, then crumble in stock cube. Bubble for ten minutes, adding a little water if needed. Splash in a dash of Worcestershire sauce and stir through parsley. Serve with mash or boiled rice.
