TODAY’S RECIPE: Tomato & thyme cod

LOW-FAT fish dish ready in 20 minutes. Serves: 4.

Ingredient­s

1 tbsp olive oil 1 onion, chopped 400g can chopped tomatoes 1 heaped tsp light soft brown sugar Few sprigs thyme, leaves stripped 1 tbsp soy sauce

Method

4 cod fillets, or another white flaky fish, such as pollock TO SERVE: baked or steamed potatoes

1 Heat 1 tbsp olive oil in a frying pan, add onion, then fry for five to eight minutes until lightly browned. Stir in chopped tomatoes, brown sugar, thyme leaves and soy sauce, then bring to boil.

2 Simmer for five minutes, then slip cod fillets into sauce. Cover and cook gently for eight to ten minutes until cod flakes easily. Serve with baked or steamed potatoes.
