TODAY’S RECIPE: Special prawn pasta
JUICY tiger prawns transform a simple dish. Serves: 2.
Ingredients
200g linguine or spaghetti 25g butter 200g raw peeled tiger prawns 1 garlic clove, crushed 100ml white wine
Method
1. Cook pasta in a large pan of boiling, salted water, according to pack instructions. Heat small knob of the butter in a frying pan. When it starts to sizzle, add prawns and fry for one minute until they start to change colour. Add garlic and sizzle for one minute more. Splash in the wine, then bring to boil. Swirl in rest of butter, season with salt, pepper and a squeeze of lemon juice, then stir in parsley.
2. When pasta is just cooked, drain and toss through prawns. Divide pasta between two bowls, pour over any excess sauce and serve straight away.
