SWEET POTATO FRITTERS MAKES 8 FRITTERS

1. Heat a little oil in a large frying pan. Peel and finely grate the sweet potato. 2. Transfer the grated potato to a sieve and squeeze out excess liquid with a spoon. Leave it to drain for a few minutes. 3. Whisk the eggs in a bowl and crumble in the feta. Stir in the drained grated potato. 4. Divide the mixture into eight balls. Flatten each between your palms and arrange in the frying pan. 5. Crank the heat up a notch and let the fritters sizzle away for 5-6 minutes, before flipping to the other side. They’re ready when they’re crisp and golden. Eat hot for breakfast, with poached eggs and spinach on the side.
