FRESH MINT LEMONADE

SERVES 6 2 SMARTPOINT­S PER SERVING

Peeled rind of 6 unwaxed lemons

Handful fresh mint, leaves stripped

40g agave nectar

300ml lemon juice

Lemon slices, to serve

Sprigs of fresh mint, to decorate

PUT the lemon rind, mint leaves, agave nectar and 300ml water in a saucepan and bring to the boil, stirring until the sweetener dissolves. Simmer for 5 minutes, then take off the heat and leave to cool. Strain into a jug, flask or bottle, add the lemon juice and 1.2 litres water. Chill until ready to use. Serve with lemon slices and mint sprigs, if you prefer.
