TODAY’S RECIPE: Mexican chicken burger

SPICY lunchtime treat that is ready in minutes. Serves: 1.

Ingredient­s

1 chicken breast 1 tsp chipotle paste 1 lime, juiced 1-2 slices cheese 1 brioche bun, split ½ avocado 2 cherry tomatoes, chopped 3-4 pickled jalapeno slices, chopped ½ small garlic clove, finely grated

Method

1. Put chicken breast between two pieces of clingfilm and bash with a rolling pin or pan until 1cm thick. Mix chipotle paste with half the lime juice and spread over chicken.

2. Heat a griddle pan over a high heat. Once hot, put on the chicken for three minutes on each side until cooked through, adding cheese for final two minutes. Add bun, cut-side down, to griddle pan to toast lightly. Season chicken.

3. Mash avocado with remaining lime juice. Stir in tomatoes, jalapeno and garlic. Spread over base of bun, add chicken and top of bun.
