TODAY’S RECIPE: Easy crepes

PERFECT for Shrove Tuesday. Makes: 8

Ingredient­s

175g plain flour 3 large eggs 450ml milk Sunflower oil, for frying

Method

1 Put flour in a large jug or bowl. Crack in eggs, add half the milk and a pinch of salt. Whisk to a smooth, thick batter. Add remaining milk and whisk again. Set aside for at least 30 minutes.

2 Heat large, non-stick crepe pan or frying pan. Add a drizzle of oil, then wipe out excess with kitchen paper. When pan is hot, add enough batter to just cover the base, swirling to ensure pancake is as thin as possible.

3 When edges are peeling away from sides of pan, shake it to see if pancake releases easily and is browning on underside. If not, cook a little longer. Flip, then cook other side for a minute or two. Serve with lemon juice and caster sugar or your favourite filling.
